I am busy prepping for a big day tomorrow.

And by big, I mean this day is going to be filled with lots of food and even more fun. Ps: the food is really bad for you dangerously tasty.

I don’t know how many of you out there are from Eastern Oregon (very few, I suspect, based on the current population of Eastern Oregon in its entirety), but if you are, you’ve definitely heard about this event:

The Pendleton Round Up is pretty much a week-long drunken revelry in Pendleton, Oregon. And I am going tomorrow. Yeehaw!

It’s also my cute mama‘s birthday tomorrow, so we are going to party it up after we get home!

Wanna know a secret? I got her the BEST birthday present. Ever. Well, almost ever. I got her the best birthday present in my budget… But I’m almost too excited to wait for her to open it tomorrow. I’ll let you know all the details after the birthday girl opens her presents.

Oh yeah, one more thing.

In honor of this event, I have spent quite a bit of today making food that’s easy to eat while watching a football slaughter (because that’s what’s coming tomorrow, Utes). Me and Michael ran to the grocery store to grab some of the necessary wares to make these delicious treats.

After displaying the junk I’ll be eating tomorrow for the world wide web in its entirety, I think we all know what I need to talk about: Eating a Healthy Diet. I feel like I should preemptively hang my head in shame for a few moments before proceeding, however because of the sheer number of calories I’ll be eating tomorrow.

[Insert brief pause here]

I hate it, but my skills at resisting yummy foods are terrible. I can’t help it! It’s like I have no willpower at all when there’s a plate of creamy, carby treats in front of my face. It may or may not be a food addiction. Either way, my boundless love for carbs has historically meant that I am consistently about 10 pounds heavier that my ideal weight.

Am I the only one with this problem??

I guess this is as good a time as any to segue into my 4th pregnancy fitness goal:

4. Weigh 125 lbs. when I run my Fall 2013 marathon

But here’s the thing. Pregnancy is the best possible time to focus on healthy eating. So even though it might sound amazing to give into all of those evil pregnancy cravings, I always try to remind myself that my body is the home of a teeny, tiny person who needs nutrients to grow.

Whether you’re pregnant or not, there are so many reasons to eat healthy it’s just ridiculous. I think one of the reasons more people don’t eat healthily is because they 1. don’t know what it means to eat healthy and 2. feel like they will be sacrificing flavor by replacing junk food with rabbit food.

To help women see that there are so many easy and tasty ways to eat healthily, I’m going to do a Superfood Series where I pick one pregnancy superfood to focus on per week. (Ps: if it’s healthy for pregnant women, it’s healthy for non-pregnant women too ;)) I happen to be the proud owner of the book The 100 Healthiest Foods to Eat During Pregnancy by Jonny Bowden & Allison Tannis. Jonny Bowden is also the author of The 150 Healthiest Foods on Earth (another book I love) that goes really in-depth into some of the most nutrient-rich (and tasty) foods you can find. He knows what he’s talking about.

Anyway, back to my Superfood Series. Every week I’ll talk about nutritional value and benefits you will get from eating a certain food and I’ll also give you some easy, yummy recipes you can use to incorporate it into your diet. Good idea? I think yes.

Ps: My C210K workout today was awesome. I was really stressed about work, so I got down to business on the treadmill and was feeling instantly better in about 30 minutes. Excercise works wonders for the psyche, tell you what.
